12.5ml Homemade Rosemary Sugar Syrup (200g caster sugar, 240ml Water, Bunch of fresh rosemary)

Method: to make the rosemary sugar syrup, get a medium saucepan and combine the sugar and water together. Add a bunch of fresh rosemary to infuse. Pop onto a medium heat and let the sugar dissolve. Leave to cool with the rosemary in and once cool, decant into a bottle.
For the drink, add the gin and syrup to cubed ice and stir to combine. Top with tonic and garnish with orange peel and a sprig of rosemary.
